   Chemical property
There are two types: α-type and β-type. α-type is methyl crystal, melting point 133ºC; β-type is ethyl crystal, melting point 132ºC(decomposition point). Sweet, slightly bitter finish. Soluble in water (250%), insoluble in ethanol (0.4%), insoluble in ether. In plants, it exists mainly in the form of condensation in polysaccharides such as mannan. It is found in the exudate of coconut shell and Fraxinusornus, and also in citrus peel, germinated seeds and molasses.
     Product use
D-mannose is a carbohydrate that plays an important role in the glycosylation of molecules in a variety of cellular processes. It relates to the N and O glycosylation of bovine protein products used in infant formula. It is also responsible for O-glycosylation of helper T cell-derived cytokine interlukin-17A, an important cell signaling molecule.
