   Chemical property
nisin is a polypeptide antibiotic secreted by Streptococcus lactis, consisting of 34 amino acids. Solubility in water depends on the Ph value, the solubility is 12% at Ph 2.5, decreases to 4% at Ph 5.0, and is insoluble in water under neutral and alkaline conditions.
