White rhombic crystal or crystalline powder, odorless, slightly sweet. Melting point is 255 ~ 257 ºC (decomposition), [alpha] 25 d = 18.5 (density = 2, water), than the rotation - 28.3 (c = 1.1, water). Insoluble in ethanol, ether and chloroform. Soluble in water (20 at 25ºC, 55 at 80ºC). Easy to decompose in alkali. It is an essential amino acid for human body, and its physiological effect is 2 times that of DL-body. It is used as a food fortifier and also in medicine. When the human body lacks, it will cause loss of appetite and fatty liver.
