Chemical property
Disodium dihydrogen pyrophosphate appears as a white monoclinic crystalline powder or a molten solid. The relative density is 1.86. Soluble in water, insoluble in ethanol. The aqueous solution is hydrolyzed to acid by heating with dilute inorganic acid. Sodium acid pyrophosphate is slightly hygroscopic and forms six crystalline hydrates after absorbing water. When heated above 220ºC, it decomposes to form sodium metaphosphate. When used as a leavening agent, an appropriate amount of aluminum salt and/or calcium salt may be included to control the reaction rate. 
   
Use
     Used as a fast starter, moisture retention agent, quality improver, for bread, biscuits and other baked food and meat, aquatic products
     As a quality improver, it can improve the complex metal ions, pH value and ionic strength of food, thereby improving the binding force and water retention of food. China's regulation can be used for soda crackers, the maximum amount of 3.0g/kg; The maximum usage in bread is 1.0 ~ 3.0g/kg.
     Used as an acidic component of synthetic leavening agents such as bread and cake, the production time of carbon dioxide is longer, and it is suitable for baked foods with less moisture content (pancakes). Used in combination with other polyphosphates as a chelating agent. The water retention of meat is very strong, but because it is acidic, it can not be used alone.
