Saccharin sodium is also known as saccharin, the scientific name of o-sulfonyl benzoimide sodium salt. White ribbed crystal. Molecular weight 205.17. Melting point 226 ~ 231ºC. Odorless or slightly aromatic, extremely sweet and bitter, slowly weathering in the air, losing about half of the crystalline water and becoming a white powder. The sweetness of dilute aqueous solution is about 300 to 500 times that of table sugar, and the sweetness threshold is about 0.00048%. Soluble in water, slightly soluble in ethanol. Its thermal stability in aqueous solution is better than saccharin, and there is no change when heated at 100ºC for 2h. The solution is placed for a long time, and the sweetness is gradually reduced. It is mainly used as an edible sweetener. It does not break down in the human body, is excreted in urine, and has no nutritional value. It is prepared from phthalic anhydride or toluene.
