   Yeast extract is also known as yeast taste, yeast extract, yeast hydrolysate. The protein content of yeast extract is about 50%, of which glutathione is about 20% and nucleic acid is 6%. It contains 18 kinds of amino acids, functional peptides glutathione, glucan, mannan, trehalose, flavorful nucleotides, B vitamins, biotin, trace elements and volatile aromatic compounds. The contents of Ca, P and trace elements in yeast extract (μg/g) : Ca 1120, P 18020, Zn 190, Fe 162, Cr 5, K 9300, Co 1.2, Mn 15, Sr 3.5, Mg 2150. It does not contain cholesterol and saturated fatty acids, has a pure natural strong flavor performance, is an excellent flavor enhancer, rich nutrition, delicious taste, rich and mellow. The main taste substances were amino acids, nucleotides and organic acids. It has been widely used in household seasonings, puffed foods, breads, pastries, biscuits, frozen foods and nutritional tonics.
    The chemical composition of yeast extract is mainly water, protein, fat, glycogen and ash, and contains a small amount of vitamin B1, vitamin B2 and niacin.
