     Chemical property
White crystal. It smells of acetic acid. It absorbs moisture easily. It is highly soluble in water (1g/m1) and emits 42.25% acetic acid. The Ph of 10% aqueous solution is 4.5 ~ 5.0. Decomposition when heated above 150ºC. Combustible. It had a strong inhibitory effect on spores and molds of Bacillusmesentericus and B. subtitis.
     Product use
Sodium diacetate is a versatile food chemical. It is mainly used as preservative, mildewproof agent, chelating agent, flavoring agent, PH regulator, preservative of meat products, and main ingredient of compound mildewproof agent. Preservative; Anti-mildew agent; Acidity regulator: chelating agent.
