   Beet red pigment is soluble in water and aqueous solvents, is water-soluble pigment, insoluble in acetic acid, propylene glycol, insoluble in anhydrous ethanol, glycerin, acetone, chloroform, fat, ether and other organic solvents. Beet red pigment is a purplish red liquid, powder or granular solid, but its hue is affected by PH value, when the PH value is 3.0-7.0 red, and more stable; PH is the most stable at 4.0-5.0; When PH < 4.0 or PH > 7.0, the color changes from red to purple; When PH > 10.0, the beet red pigment in beet red pigment was converted to beet xanthin, and the color of the solution quickly turned yellow, indicating that beet red pigment was stable under acidic and neutral conditions. Since the PH of most foods is between 3.0-7.0, and the color of betaside does not change in this PH range, the color of foods containing betaside is generally not affected by PH.
