Beet red pigment is a natural pigment formed by extraction, separation, concentration and drying of edible red beet as raw materials. The main component is beet anthocyanin. Beet red is a red purple to deep purple liquid, powder form, easily soluble in water, aqueous solution showing red to purple, bright color.
Beet red pigment has bright color, uniform coloring, no odor, and good coloring function. Beet red pigment is widely used in beverage, ice cream, some alcohol, candy, pastry, meat products and other food coloring. The coloration of food is good, and because the pH value of most foods is between 3.0 and 7.0, and its color does not change in this pH range, the color of food will not be affected by pH value when beet red is used as a food coloring agent. In the production of low moisture active food, the use of beet red can achieve satisfactory staining and long-lasting color results.
Compared with other colorants, beet red is relatively stable during food processing and storage. Beet red gives foods the bright red color of bayberries or roses. Vitamin C is slightly stable in its presence, prevents fading in the presence of polysaccharides, and is used in cold fruits that are not affected by heat and light, especially yogurts, milk drinks and strawberry drinks, soft ice and any food.
