   theobromine, the scientific name 3,7-dimethylxanthine, is used as a bitters in food processing, but also widely used in biochemical research, drug synthesis and so on.At present, there are two main methods of producing theobromine, one is extracted from cocoa beans or cocoa bean shells. The other is the theobromine product obtained from monomethyl urea and cyanoacetic acid through condensation reaction, cyclization reaction, nitrosation reaction, reduction reaction, acylation reaction, closed-loop reaction, methylation reaction and double recrystallization.
  Chemical property
White acicular crystal or crystalline powder with bitter taste. The main bitter ingredient in chocolate. Melting point 357ºC, at 290 ~ 295ºC sublimation. The solubility in water is about 0.05%, in hot water about 0.66%, in 95% ethanol about 0.045%, soluble in alkali solutions and concentrated acids.  It has excitatory and diuretic effects.
