    Malt amylase is a mixture of amylase extracted from malt. It is a pale yellow or white amorphous powder, odorless and tasteless. Soluble in water is turbid. Optimal Ph5.0 ~ 5.5, aqueous solution is inactivated at Ph1.7 or heated to 860C.
    Enzyme preparation. It is one of the most widely used and consumed enzymes. It is mainly used for dough improvement in bread production (reducing dough viscosity, accelerating fermentation process, increasing sugar content, and easing bread aging); Pretreatment of cereal raw materials in infant and young child food (starch hydrolysis); For saccharification and decomposition of undecomposed starch in beer manufacture; Liquefaction and saccharification of starch in sake production; Saccharification and decomposition of undecomposed starch in the alcohol industry; Starch decomposition in juice processing and improved filtration speed; And vegetable processing, syrup manufacturing, caramel production, dextrin powder, glucose processing and manufacturing.
