It contains About 14% calcium. It stabilizes and improves the texture of canned fruits and vegetables by converting unstable pectin into insoluble calcium pectate.Therefore, it prevents structural collapse during cooking. It is used in angel food cakes, whipped toppings and meringues to increase the stretchability of the protein, which in turn increases foam volume.
