Vitamin A is a fat-soluble vitamin that exists in the form of free aldehydes or esters in animal foods and is abundant in fat, protein, milk and liver. Plants do not contain vitaminA, but contain the precursor of vitaminA (provitaminA), present in carrots, tomatoes and other vegetables, animals after absorption, can be converted into vitaminA. Vitamin A is necessary for the maintenance of human growth, development, reproduction and the stability of cell membranes, and plays an important role in the visual process.

The melting point is 62-64ºC and the boiling point is 120-125ºC (0.667Pa). Soluble in oil or organic solvents, insoluble in water. Good thermal stability, more stable under alkaline conditions, unstable under acidic conditions. Antimony trichloride has a characteristic blue reaction, is vulnerable to ultraviolet light and oxygen in the air, and can be protected when co-existing with vitamin C.
