    Amylase is the general name of enzymes that hydrolyze starch and glycogen. Usually, amylase catalyzes the hydrolysis of starch slurry on fabrics. Due to the high efficiency and specificity of amylase, enzyme desizing has a high desizing rate, fast desizing, less pollution, and the product is softer than acid and alkali methods, and does not damage the fiber.
   The main function of amylase is to hydrolyze glycosidic bonds in starch molecules, converting complex carbohydrates into monosaccharides. There are three main types of amylases: alpha -, beta -, and gamma-amylases act on different parts of the carbohydrate molecule, respectively. Alpha-amylase can be found in humans, animals, plants, and microorganisms. Beta-amylase is found in microorganisms and plants. Gamma-amylase is found in plants and animals.
